Coconut-Stuffed Pears

  1. Preheat oven to 180°C (350°F)
  2. With electric mixer, beat egg whites until stiff peaks form. Blend in sugar and beat another minute or two.
  3. Blend in grated coconut and cranberries by folding preparation with a spatula
  4. Peel pears and cut them in half. Remove cores and place halves in cooking dish.
  5. Fill each pear cavity with the preparation. Bake in oven for 20 minutes.
  6. Top with maple caramel and serve
