Maple Ginger Glazed Shrimp Skewers

Ingredients

  • 500 g (1 lb) large shrimp, peeled and de-veined, tails left on
  • 85 mL (1/3 cup) maple taffy
  • 2.5 mL (1/2 tsp) each salt and pepper
  • 30 mL (2 tbsp) each rice vinegar and fresh orange juice
  • 15 mL (1 tbsp) minced fresh ginger
  • 2.5 mL (1/2 tsp) hot pepper sauce
  • 2.5 mL (1/2 tsp) each grated orange zest and sesame oil
  • Toasted sesame seeds (optional)
  • Fresh chopped coriander (optional)

Directions

  1. Preheat an indoor or outdoor grill to medium-high
  2. Soak 16 short wooden skewers in cold water for 30 minutes
  3. Thread two shrimp onto each skewer. Sprinkle evenly with salt and pepper.
  4. Blend the maple taffy with rice vinegar, orange juice, ginger, hot sauce, orange zest and sesame oil
  5. Brush half of the glaze all over the shrimp and grill for 3 minutes per side or until shrimp are glazed, well-marked and no longer translucent
  6. Baste with remaining glaze before removing from grill
  7. Sprinkle with sesame seeds and coriander if desired
