Maple Syrup Pie

Ingredients

Maple filling

  • 1L (4 cups) 35% cream 
  • 400 mL (1 3/4 cup + 2 1/2 tsp) maple syrup
  • 275 g (1 cup + 5 tbsp) maple sugar
  • 260 g (1 1/3 cup + 2 1/2 tbsp) brown sugar
  • 200 mL (3/4 cup + 2 1/2 tsp) evaporated milk
  • 60 g (1/2 cup) all-purpose flour
  • 2 eggs

 Sweet dough

  • 800 g (6 1/3 cups + 1 tbsp) all-purpose flour
  • 200 g (1 cup) maple sugar
  • 4 g (1 tsp) baking powder
  • Pinch of salt
  • 230 g (1 cup) cold butter
  • 4 eggs

Directions

Sweet dough

  1. Combine flour, maple sugar, salt and baking powder and mix well
  2. Cut butter into little pieces and add to dry ingredients
  3. Then, using your hands, break the butter into tiny pieces and pinch and squeeze it into the dry ingredients until no large pieces of butter remain visible
  4. Beat the eggs in a small bowl and pour over the flour and butter mixture
  5. Stir in with a fork until the dough begins to hold together but still appears somewhat dry
  6. Flour a work surface
  7. Press and knead the dough quickly until it is smooth and uniform
  8. If the dough is too dry, add 15 to 30 mL (1 to 2 tbsp) of milk
  9. Form a ball and cover
  10. Refrigerate for one hour before rolling

Maple filling

  1. Blend the maple syrup, sugars, evaporated milk, flour and eggs with a whisk. Set aside.
  2. Bring the cream to a boil in a pot
  3. Add the mixture to the cream
  4. Simmer for 4 minutes, stirring constantly
  5. Let the mixture cool
  6. Pour into pie crust
  7. Bake approximately 45 minutes in a 180°C (350°F) oven
