Tomato and Bocconcini Salad

Ingredients

  • 250 mL (1/2 cup) olive oil
  • 60 mL (1/4 cup) balsamic vinegar
  • 30 mL (2 tbsp) maple syrup
  • Fresh sweet basil leaves to taste
  • Salt and pepper to taste
  • 6 to 8 ripe fresh tomatoes
  • 400g (3/4 lb + 2oz) bocconcini cheese

Directions

  1. Whisk together olive oil, balsamic vinegar and maple syrup
  2. Add a few chopped sweet basil leaves, season and set aside
  3. Layer on a plate alternating tomatoes and bocconcini slices 
  4. Pour the vinaigrette over the tomatoes and cheese
  5. Decorate with fresh sweet basil and serve
