Watermelon and Celery Lemonade with Maple Honey

  • Servings: 6-8
  • Directions: 15 minutes

Ingredients

  • 250 mL (1 cup) lemon juice                     
  • 60 mL (¼ cup) maple honey               
  • 2 stalks of celery, cut into chunks
  • 1 L (4 cups) of watermelon cubes
  • 500 mL (2 cups) ice cold water
  • Ice cubes
  • Fresh mint and thin wedges of watermelon to garnish

Directions

  1. In blender, mix together lemon juice, maple honey, celery, watermelon and water. Liquefy.           
  2. Strain through a sieve by pressing with the back of a ladle to collect as much liquid as possible. (Set aside what is left in the sieve for another recipe, such as a smoothie.)
  3. Empty into a pitcher and refrigerate until ready to serve.
  4. At serving time, pour the lemonade onto ice cubes and decorate each glass with fresh mint and a watermelon wedge.
     

Alternative:

Add vodka, to taste, to turn this lemonade into an original cocktail!
